Whole Roasted Chicken with Vegetables
Okay, the quick part is that cooking this whole roasted chicken one day will save you time over the next couple of days. The one roasted chicken can be used for the next day’s lunches and dinners.
One way to cut down on the number of times you cook each week is to cook a roasting chicken. A roasting chicken, depending on the size of the chicken, and the size of the family, can be used in at least two or three meals.
Cook the roasting chicken on a day when you have time to make a full meal. It could be a weekend day,or a day off during the week. Rinse the chicken inside and out. Either place a couple of whole, unpeeled garlic cloves inside the chicken, or cut an orange in half and put that in the cavity of the chicken.
Toss some small red potatoes in the roasting pan, along with some whole, peeled carrots.
Season the exterior of the chicken with salt, pepper, thyme and Italian seasoning. Cook the whole, unstuffed chicken at 350 degrees for approximately 25 minutes per pound. When the chicken wings have browned, cover them with aluminum foil so they do not burn. Continue cooking the chicken uncovered. Cover the rest of the chicken with foil when it is browned to your liking, so it does not get too brown.
Remove and toss the chicken skin. Slice and serve the roasted chicken and vegetables with a salad.

The left over roasted chicken can be used for lunches. Make chicken breast sandwiches with multi-grain or whole wheat bread. Serve with salad and fruit.
Or made home made chicken salad made with Miracle whip, celery and chopped purple onions. Add grapes to the chicken salad if you are feeling adventurous.

Kids won’t complain about having chicken again when it has a whole new flavor. Left-over roasted chicken can also be lightly simmered with a package of low-sodium taco seasoning, put into multi-grain tortillas and broiled to melt the cheese. Serve with rice.

Steam some broccoli until it is almost cooked. Removed and drain. Mix the steamed broccoli in a shallow casserole dish with cooked chicken pieces and low-sodium cream of chicken soup and 1/4 of sherry. Sprinkle with Parmesan cheese. Bake for 15 minutes.

Grains that can be added to chicken soup include: 1/2 cup of lentils, 1/2 cup of rice, 1/4 cup of pearl barley, a cup of pasta in any shape. Or add a can of white beans. These items can be added raw, or add cooked left overs. Adding raw grains and legumes increases cooking time and does require more water to be added to the broth.
